Paleo Burger Biscuits

This is one of our favorite munchies! They are perfect to pack for school lunches, road trips, picnics or just a quick grab and go snack. Make a big batch and freeze for ease to have on hand in a pinch!

Note - I use a food processor to blend all ingredients. Alternatively you could use a bowl and hand mixer.

Paleo Beef Biscuits

(makes about 6 large or 8 medium biscuits)

4 pastured eggs

1/3 cup coconut flour

2 heaping Tbs coconut oil (melted)

1 c. browned ground beef (100% grass-fed is best!😊)

1/4 - 1/2 tsp garlic granules*

generous pinch of Real Salt

Parchment paper

Cookie sheet

Pre-heat oven to 350. To the food processor or mixing bowl, add eggs, coconut flour and melted coconut oil. Blend on high until thoroughly mixed. Add seasonings to taste and blend in. Pour in the cup of ground beef and mix gently to fully incorporate. Scoop heaping spoonfuls of the batter onto a cookie sheet lined with parchment paper. Place in the oven and bake for 10 minutes, then check for doneness. Depending on the size of your biscuits, you may to need to continue baking for another couple minutes. You will know they are done when the bottoms are golden brown and the tops stay firm when touched. Let cool a bit before enjoying! Store in the fridge.

*Experiment with other seasonings for your taste or purpose, such as fennel and sage for a breakfast vibe, or basil, oregano and thyme for Italian flair. You are only limited by your creativity! 😊
